With a new concept for a Thai diner which intended to produce high quality food to the end user for take away or eat in, Kanum approached Platinum Catering Equipment to fit out it kitchen as they were aware we had considerable experience within the ethnic food sector.
The most important element was that the kitchen was in full view of the public so the sharpness and cleanliness of the equipment was always a consideration so it needed to be both functional and easy to maintain.
The engine room of the kitchen consisted of a bespoke water cooled 9 burner wok station with over 200kw of gas required and a 10 grid Gas Angelo Po combi oven coupled with twin fryers and a bain-marie. Ventilation was a major part of the project to ensure adequate air changes not only within the kitchen but within the entire restaurant. The aesthetics of the front of house was always on the clients agenda so to break the counter and give it a contemporary look we used a drop in heated unit from Counterlines Manhattan range. Along with equipment we also supplied the floor and wall finishes as per the specification.
